Taste of Christmas - Bailey's Irish Cream Cakes

One Christmas tradition my daughter and I have is to make Bailey's Irish Cream Cakes. She has taken the lead in this and runs the show to make sure they are baked and ready in time for Christmas day. They are wonderfully delicious. See the Bailey's cakes we made pictured above.

1 pkg. (18.25 oz.) white cake mix
1 (5.5 oz.) pkg. instant vanilla pudding
1 1/2 c. Bailey's Irish Cream
1 c. mini chocolate chips
4 eggs
1/2 c. vegetable oil

Preheat oven to 350 degrees. Combine cake ingredients in order listed above and blend well. Pour into greased 1 cup loaf pans. Bake for 30 minutes.

GLAZE:

2 c. Powdered Sugar
3/4 c. Bailey's Irish Cream

Combine glaze ingredients.
Poke holes in warm cakes with a toothpick and pour glaze over cakes. Cool for 2 hours in loaf pans.

Enjoy! Do you have a favorite Christmas recipe? Please share if so.

Ireland's Musical Collaboration - A Christmas Gift

A collaborative song with The Priests and none other than Shane MacGowan formerly of the Pogues. Hear the priests and Shane discuss this reprise of the Drummer Boy/Peace on Earth below. Did you know that a similar collaboration was first done by Bing Crosby and David Bowie?

It seems a mutual respect and love of music and faith was at the core of this most recent collaboration.

Slide at the Annenberg Center - Irish Trad and Contemporary

Slide appeared December 11th at the Annenberg Center of the University of Pennsylvania in Philadelphia. This was part of Slide's Christmas Tour and also part of The Annenberg's very popular Irish Music Series. This very talented group hails from Ireland and has performed in venues across the world.

The show was excellent and energizing! Their website describes them as a band of Contemporary and Traditional Irish Music. Surely they shine on both.

Christmas Songs included Fairy Tale of New York and other Christmas favorites woven in to the traditional reels. One highlight was when all sang Silent Night which the audience was taught to sing along in Gaelic.
A wonderful show it was and I would be sure to see them again if they are in town.
